The Whole Enchilada Fiesta is this weekend. I am going to be entering the cooking contest. Scary!! I am nervous because I only started making enchiladas a few years ago for Mike. I am sure I can't compare to the hometown cooks. Las Cruces is all about chile and enchiladas are one of the most popular dishes. Guess we will be eating a lot of enchiladas this week, so I can practice!
